I've always been a whetstone, manual purist since I started sharpening knives as a kid. Lately, time is short and my knives were just dull because I didn't have time to do it right, so I didn't do it at all. Finally decided to do my homework and get this electric sharpener. Out of the box, I read the directions, since the manual says very clearly do so, as do many reviews. I grabbed one of the kitchen knives, spent about 2 minutes, and voila! pretty sharp. I went and got another, worked on it for a while, and could make nice easy "S" cuts in a piece of paper. "Sharp enough for government work", eh? Then I went and got the big chef knife and worked on it for a while, and when it was finished, held it blade away and pinched the blade carefully between thumb and forefinger to wipe off the small amount of metal dust as I've done gazillions of times, and blood started running out of my thumb. *^%$*&& Ok, VERY sharp. I even put red electrical tape on the handles before I put them back in the butcher block to make sure my wife would understand "something's different now". Being extra careful, I finished putting a good edge on my EDC Benchmade, which took a little longer (5-6 minutes), but still FAR better edge than I started with. I'm very happy with this unit. I'm going to try some of my tanto/15 degree knives next, but I'm going to keep my fingers off this time...
